Amaranth Recipes


Amaranth recipes are really healthy. Amaranth is high in protein, fiber, calcium, iron, potassium, phosphorus, Vitamin A, C and E. It contains 2 times more calcium than milk!

And, it's gluten free and easy to digest. When you combine it with other grains, beans or seeds, it makes a complete protein. Technically it's not a grain, so its allergen free for most everyone.



Years ago I heard about amaranth when the Rodale Institute was promoting it as a food that could fight world hunger, since it is high in protein. Now it is gaining attention as a gluten free grain.

Amaranth is a traditional food from the Aztec culture, Mexico and Peru.

Amaranth is an acquired taste. It tastes wild, a little bitter, and the texture is different. It's more like polenta than rice, not fluffy but creamy. It make good puddings and polenta style dishes. I like it with other grains and with onions added in.

So it takes the magic of a cook to create some yummy amaranth recipes!

Here are some amaranth recipes to play with.


Basic amaranth:

1 cup amaranth
2 1/2 cups water

Bring water and amaranth to a boil, lower heat, and cook 20 minutes.

Variations:

make it sweet: cook it with 1/2 tsp cinnamon and 1/4 cup raisins and serve with honey or stevia

Make it savory: add olive oil, thyme, sauteed chopped onions and mushrooms, or tomato sauce and garlic


Amaranth and Millet Polenta

1/2 cup amaranth
1/2 cup millet
3 cups water
1/2 tsp cinnamon
lightly toasted fennel seed or pumpkin seeds

Bring grains and water to a boil. Lower heat and ad lid and cook 20 minutes. Stir and serve, top with seeds


Quinoa and Amaranth Pilaf

1/2 cup quinoa
1/2 cup amaranth
2 cups water
1 cup diced onion
1 cup corn kernel
1/2 tsp dried dill
pinch sea salt

Bring all to a boil, lower heat and cover. simmer for 20 minutes.


Where to find amaranth

You can find this grain at a natural grocery store. It's becoming more available. Look for it in the gluten free section.
