Beet Recipes

Beet recipes are good for summer picnics and winter salads. As food medicine, beets are good for your blood, heart and circulation. They also help your liver and are a good source of silicon.



In the summer, you can grate them and lightly saute them. Or add raw grated beets to green salads.

In the winter, beets can be part of roasted vegetables, or boiled whole, peeled and and made into a marinade cooked salad.


Here's some beet recipes:

Beets with fresh mint

2 beets, grated by hand or in a cuisinart

1/2 onion, diced

1 Tbsp fresh mint

pinch sea salt

fresh lemon juice

olive oil

Directions: Grate the beets. Dice onions, and saute onions in saucepan with 1 Tbsp olive oil. After 3 minutes or so, add in beets, Saute 5 minutes.

Add a pinch of sea salt and fresh mint. Mix together and saute. Add a touch of fresh lemon juice. Turn off heat and serve!


More Summer beet recipe ideas: Juice them with carrots, ginger and celery in a juicer.

Grate them by hand and add to a raw green salad.

A small amount goes a long way. Too many beets will make your whole dish ruby colored. And beware--beets juice stains your clothes!


Beets and onions marinade

4 beets, cut off the greens and long thin root but keep them whole.

1/2 onion, sliced thin in half moons

Directions:

Cook beets in a pot of water. Bring water to a boil, lower heat and simmer for 40 minutes. Put a fork in the beets and see if they are tender.

When beets are tender, drain water and beets in a colander. Briefly run cool water over the beets. When beets are cool enough to handle, peel them by hand. The peel should slip off easily.

Slice the beets. Put in a salad bowl. Then, bring 2 to 3 cups of water to a boil, add in onion slices and cook 2 minutes to wilt. Then drain the water and add onions to beets.

Mix onions with beets. add in marinade: olive oil, lemon, vinegar, salt, and fresh mint or dill. Let sit for 10 minutes to blend flavors. serve beets on a bed of greens if desired.
