Create with Carrot Recipes
Carrot recipes are versatile. In summer you can make them into salads and juice, and in winter they are good in stews and pilafs. Anywhere you want a substantial sweet taste, carrots are good.
Carrots are a rich source of Beta carotene. They help your vision and your liver. Since they work on the liver, they are helpful for PMS and hormonal issues. If you feel uptight or angry, try some carrot juice! They are alkaline and high in antioxidants, so they help your whole body. And they are high in silicon, which help your calcium metabolism. Carrot juice is too sweet on its own, though, so it's good to add celery, spinach or other greens to it. Many of the nutrients are near the peel. So just wash them with a vegetable scrubber. Here's some recipes to play with.
Carrot Recipes #1: juice 2 carrots 1 small green apple 2 celery stalks 1- 2 inch ginger roots, (depending on how spicy you like it) Makes 1 1/3 cups juice Juice it all and serve fresh. This juice is sweet but not too sweet. If you want less sweet, add more celery.
Carrot Recipes #2: slaw Grate in a food processor 2 carrots grate or slice thinly 2 celery stalk. Add salt, olive oil, vinegar to taste Add 1/2 tsp cumin 1/4 cup raisins (soak them in water for 10 minutes to plump them up) add 2 Tbsp sesame seeds Combine all to create a salad.
Carrot Recipes #3: salad 2 big carrots 1/4 cut raisins, soaked (or use gobi berries) 1 stalk celery 1 Tbsp good quality mayonnaise (such as Vegannaise brand) Juice of 1/2 lemon 1 bunch mint, a handful 12 almonds, blanched and chopped Grate carrots. A Cuisinart works well for this. Dice celery small and add to carrots in a salad bowl. Slice almonds and add in to salad. Chop mint and add in. Add raisins, pinch of salt, and juice of 1/2 lemon. Note: blanching the almonds help digestion of the nuts. Simply boil them for a few seconds in water, then peel off the skins with your thumb. Easy.
Carrot Recipes #4: vegie butter 4 carrots, sliced 1 tsp curry powder 1/2- 1 cup water 5-7 black olives 1 tbsp lemon juice handful of cilantro pinch of salt Simmer carrots, salt and curry powder in a pan until carrots are soft, about 15 minutes. Put in blender with a cilantro, lemon and olives and blend. This makes a good spread on bread, crackers or tortillas.
Carrot Recipes #5: Creamed vegies 2 cups diced carrots 1 cup diced onions 1/2 cup peas olive oil, 1 tsp or so 1 pinch sea salt 2 cups water 1/3 to 1/ cup rice or oat flour parsley or dill for condiment Saute onions and salt for a few minutes. Add carrots and peas and continue to saute. Reduce flame and low and cover until carrots are almost tender. Add flour to pan and stir into vegies. Gradually add water to pan and stir in. Bring to a boil, reduce to low, cover and simmer a few minutes. Garnish with parsley or dill. May you enjoy these carrot dishes as snacks and side dishes.
