Cucumber Salad Recipes


Cucumber salads are great in summer. They will keep you "cool as a cucumber"! Cukes help you adjust to the summer heat.

Traditional healing says that cucumbers clear heat, help to quench thirst, relieve edema and act as a diuretic.

Cucumbers are a great source of silicon, a mineral that helps us absorb calcium. Silicon is good for connective tissues, bones, ligaments, collagen and tendons. It strengthens your skin, hair and nails.

Cucumbers stay fresh for a while, longer than lettuce, so they make good picnic salads and travel food.



Here's some cucumber salad recipes

Cucumber salad recipes #1:

Cucumber salad with orange

This dish is Moroccan. It called for sugar and I substituted stevia.

2 cukes, peeled and grated

juice of 1 orange

juice of 1/2 lemon

pinch stevia (optional)

1/2 tsp ground cinnamon

salt

Put grated cukes in a bowl. Add salt and let sit for 10 minutes. The water will draw out some water from the cukes. With your hands, squeeze out the liquid, then return to the bowl. Add citrus juices and stevia, toss well and sprinkle with cinnamon.

Chill for 1 hour before serving.


Cucumber salad recipes #2:

Pressed cucumber salad

serves 1-2

1 cuke, sliced thin

5 red radish, sliced thin

1/2 cup sliced red onions, sliced thin

1 Tbsp sea salt

Put all ingredients in a bowl. Add a smaller bowl on top to press.

Fill the smaller bowl with water for a weight. Press for 30 minutes or so. Vegies will release water and be more crunchy. remove water, just drain it out, or squeeze with your hands.

Serve with fresh cilantro. Optional ingredients: celery, sunchokes, carrots, sliced thin.


Juice 'em.

You can also use cucumbers in vegetable juices, if you have a juicer. Try a juice with carrots, cukes, parsley, celery and ginger for a kick. It's best to peel the cukes first so they don't clog the juicer!
