Green Bean Recipes


Green bean recipes are easy and adaptable. Green beans are in season in summer and go well with basil, tomato, summer squash, zucchini and mushrooms. They hold up well to marinades and last longer than lettuce salads, so are good for picnics and summer adventures!

Once you buy green beans, use them quickly, as they get old and moldy fairly fast.


Here's some recipes:


Green Bean recipes:

Green beans with shittake mushrooms salad

About 2 1/2 cups green beans, sliced into bite size

4 shiitake mushrooms, fresh, sliced

1/2 cup red onion, sliced

6 black olives, sliced

1/2 cucumber, sliced

1 boiled egg, sliced (optional)

1 garlic clove

dressing:

1 Tbsp olive oil

1 Tbsp vinegar

1/4 tsp dry mustard

pinch sea salt

2 tsp lemon juice

Put green beans and mushrooms in a steamer and steam for 5 minutes.

Remove from heat and put in serving bowl. Add black olives, garlic, cucumbers, and boiled egg. Toss with dressing and serve.


Green bean recipes,

Green Beans salad with tomato

4 cups green beans, sliced into bite sizes

2 zucchini, sliced diagonally and then in half

1 big tomato, chopped

Dressing:

1 tsp dried oregano

1 clove garlic, minced

pinch salt

2 tsp vinegar

2 tsp olive oil

Bring a big pot of water to boil. Add green beans, cook 4 minutes until bright green. Remove with a slotted spoon. Then add zucchini, cook 1-2 minutes. Drain.

Chop tomato. Add in a bowl: tomato, beans, zucchini. Drizzle with dressing.


Sauteed green beans

2 cups green beans, sliced

1/2 cup sliced almonds

soy sauce

olive oil

minced garlic

red pepper flakes

Minced fresh parsley

Saute garlic in olive oil over medium low heat, then add green beans. Saute 3-4 minutes. add a pinch of soy sauce. Add hot pepper flakes if desired, for some heat. Serve with minced parsley and lemon wedges for garnish.


More green bean ideas: Steam them then add walnuts, feta cheese and sun dried tomatoes, for Gourmet green beans!

Make a 3-bean salad: Combine 1 cup of each of cooked green beans, cooked garbanzo beans, cooked kidney beans. Marinate overnight in olive oil, balsamic vinegar, pinch of salt, and shredded fresh basil and or dill. Taste and adjust seasonings.
