Healthy Lunch Ideas

Here are some healthy lunch ideas for you. Include grain, protein, healthy fats, and lots of vegies!



Grain: Have some whole grain pasta, a quick cooking grain such as millet or quinoa, or a leftover rice on hand

Protein: beans, tempeh or tofu, fish, poultry or meat, a small portion is best. Be sure to buy organic meats to avoid the antibiotics and hormones added to conventional meats.

Vegies: in salads, steamed or sauteed. The summer garden vegies are nice, such as summer squashes, green beans, celery, carrots, broccoli and more. And have some greens, like lettuces, kale, collards, spinach.

Healthy fats: Nuts or seeds, pesto sauce, avocado, olives, olive oil and lemon, dressings, flax oil, raw butter

The starchy vegies like winter squash, pumpkin, cauliflower, make good thick stews or be used instead of a grain dish.

You can listen to your body on amounts. Many folks find it's best to emphasize the vegetables, and have less meat and grain. Some people do well with food combining, where you have a meal of meat and vegies or grain and vegies, but not grain and meat together.


For example, today I had quinoa pasta with parsley pesto, (whole grain), bean soup (protein), and steamed summer squash and carrots (vegetables). The pesto added some healthy oil (olive oil).

Another example: quinoa, poached tilapia fish, salad, and steamed vegies. There's the grain, protein and vegies.


You can also make a one pot meal, where you include a grain, protein and vegies in one dish like a minestrone soup, or a hearty salad.

There's also the extras: healthy oils in sauces, lemon and garlic, fresh herbs, and occasional desserts. I like simple desserts, like applesauce with a few nuts or seeds sprinkled on top.

And you could always have a sandwich, on whole grain bread. Try hummus and sprouts, guacamole, sprouts and tomato, tuna salad with lettuce and tomato. Use mustard instead of mayo, since most mayo has unhealthy fats and sugars. So be sure to read labels of any packaged mayo and condiments you buy.
