Healthy Snack Recipes


Having some healthy snack recipes can really help you stay on track with a healthy diet.

Most packaged snacks are too salty, sugary and have chemicals added. Even the health food store has chips and energy bars full of sugar and unpronounceable ingredients!

These processed snacks can be addicting and cause weight gain. Who needs that? It's better to prepare your own snacks.


Plan Ahead with Sunday Cooking

On Sunday, I make a pot of beans and a whole grain. Then I use them to create snacks during the week. The grain can become grain salad, the beans can be rolled up into a taco.

Or make a bean dip by mixing your beans with your favorite salsa.

You can also make hard boiled eggs to last a few days and grab them on the go.

You can cut up celery and carrots to grab for snacks during the week.

Cucumbers are good with hummus.


THE EASIEST SNACK RECIPES:

Mix fresh fruit with nuts or nut butters. Keep a variety of fruits and nuts in your kitchen.

I like apples and almonds. Apples are good for travel because they aren't so juicy.

You can try berries and walnuts, pears and Brazil nuts, plums and cashews.

Here's another idea: warm a corn tortilla and add peanut butter or tahini and apple sauce.

You can also try dried fruit and nuts, called trail mix. It's best to buy separate dried fruits and nuts in the bulk bin and make your own. Most pre-made trail mixes are loaded with sugar and strange ingredients.

And if you have a juicer, try carrots, celery and ginger juice for a spicy drink.


HEALTHY SNACK RECIPES FOR KIDS: BUGS ON A LOG

(Celery peanut butter sticks)

Got any young boys in the house? Let them create this!

Celery sticks, cut to about 3 inches long

fill with peanut butter

top with raisins


HEALTHY SNACK RECIPES: PEACH SMOOTHIE

1 tbsp almond butter

1 cup water

2 peaches, sliced

1 tsp vanilla extract

1 tsp cinnamon

1 tsp fresh mint

1 packet stevia sweetener or 1 tsp of rice syrup

1 Tbsp almonds or cashews

Put all ingredients except nuts in the blender and blend. Top with slivered almonds or cashews.


HEALTHY SNACK RECIPES: CORN AVOCADO SALAD

This is good on a tortilla or pita bread

2 cups corn, cooked

1 avocado, cut into chunks

2 scallions, minced, or 2 Tbsp red onion, minced

dressing:

3 Tbsp brown rice vinegar

2 Tbsp fresh lemon juice

1 Tbsp extra virgin olive oil

3 Tbsp cilantro or parsley

1 tsp cumin, optional

salt and pepper to taste

Mix corn, avocado and onions in a mixing bowl, and add dressing. serve on a bed or romaine lettuce or with a tortilla.


HEALTHY SNACK RECIPES: SIMPLE COOKED APPLES

2 Granny Smith apple, sliced

1 tsp cinnamon

1/3 cup water

1/2 tsp vanilla extract

Put all ingredients in a small saucepan and cook on simmer for about 6 minutes, until apples are soft. Eat apple by itself or with sliced almonds or granola for crunch.
