Roasted Vegetables Recipe
I like to make my roasted vegetables recipe in fall and winter and use root vegetables and winter squash. The heat from the baking brings out the sweetness of the roots. It's a really simple recipe. You just cut up various roots and perhaps a winter squash, add salt, pepper and herbs, coat with olive or grapeseed oil, and put in a 375 degree oven for about 45 minutes. It is January, and Alan just harvested daikon and I roasted them with onions, garlic and butternut squash. Yum!
Here are some roots you can use in a roasted vegetables recipe: beets, carrots, leeks, garlic cloves, fennel bulb, onion, shallots, sweet potatoes, Irish potatoes, small red potatoes, all kinds of hard winter squash, turnips, burdock, daikon root, rutabaga, parsnips. These root vegetables are good for warming you up in the winter and building strength. When you cook a root for a long time in the oven, it's very grounding and filling.
Root vegetables recipe: 1 1/2 to 2 potatoes, any type, scrubbed and cut into chunks, about 1 1/2 inches wide 2-3 tbsp olive or grapeseed oil 4 garlic cloves 1-2 carrots, sliced in 1 inch chunks 1 onion, cut into 1 inch chunks 1 burdock, cut into 1/2 inch chunks (optional) 1 Tbsp chopped fresh rosemary Heat oven to 350. Put roots in a bowl and toss coat with oil, salt and pepper and rosemary. Spread evenly on a baking sheet or large casserole dish. Cover with foil. Put in the oven for 30 minutes. Then remove foil. Stir the vegies and cook about 15 minutes more, until they are nicely browned and tender. Each oven is different on temperature settings. My oven needs to be set higher. Experiment with the time and temperature. Just check the vegies with a fork after 30 minutes, to see when they are tender.
Grapeseed and Olive Oil If you make your roasted vegetables recipe in a hot oven, over 350 degrees, You may wish to use grape seed oil. It's a by-product of the wine making industry and is a traditional oil in Europe. It has a mild taste and a high smoke point. It is good for temperatures up to 425. Grape seed oil also contains many of the good nutrients we find in grapes, like phytochemicals and flavonoids. Choose unrefined, organic oils. Refined oils are often treated with chemical solvents. And buy all oils in a dark glass bottle and keep them away from heat and light. Olive oil is an option as well, it has a maximum suitable heat of 350 degrees. Extra virgin is the best quality. Enjoy!
