Recently I went to Los Barrios in San Antonio, a wonderful Mexican restaurant, with my family. It got me thinking about salsa, and since it's summer, I have fresh home grown tomatoes that will go great in salsa.
And some salsa recipes include summer fruits. I have seen peaches and mangoes as ingredients in Mexican recipes. So here is what I came up with for some basic salsa recipes.
Put all ingredients in blender or food processor and pulse to blend, leave it chunky. Taste and adjust seasonings.
This is good with chips, on tacos, served with fish, chicken or beans.
TOMATO SALSA, RAW
2 Tbsp purple onion, diced small
handful cilantro, fresh, chopped
3 tomatoes, fresh,, chopped
2 Tbsp lemon or lime juice
1-4 to 1-2 tsp sea salt
1 jalapeno, diced, remove seeds (or keep them in if you want it hot!
1 Tbsp olive oil
1 tsp oregano
Put all ingredients in the blender, and pulse. Leave it chunky. Taste and adjust seasonings
Variations: Make it more substantial by adding in black beans, fresh, lightly cooked corn kernels, and/or avocado chunks, YUM
TOMATO SALSA, COOKED
Some people like salsa cooked. And food scientists say that when tomato is cooked with a bit of olive oil, the lycopene, a healthy nutrient, is more bioavailable.
And others say that the solanine in tomatoes, a part of the tomato which can cause joint pains in some people, is reduced. Try your sauce both ways and see which you like.
5-6 big red tomatoes, cut in half and placed on a baking sheet with cut side facing up.
sea salt
dried basil, about 3 Tbsp or more
2 cloves garlic, fresh, chopped
2 green onions
2 Tbsp olive oil
1 jalapeno, optional, seeded for less heat
Place the tomatoes on baking sheet and sprinkle on salt, dried basil, garlic and drizzle on some olive oil.
Bake in a 350 degree oven for about an hour, until tomatoes start to look dry.
Put them in a blender and add green onions, a bit more olive oil, pinch of lemon juice and jalapeno if you desire heat.
Blend and adjust seasonings.

Tomatoes, jalapenos and a pinch of salt,
Stir them all together
make it hot, hot, hot,
add a pinch of lemon and cilantro, too
So I can eat may salsa
