Spinach Salad Recipe
Here are two spinach salad recipes. The first one is hearty with the beans and could be a simple vegetarian meal. Just add some whole grain bread or a cup of soup, or eat by itself. I had this for lunch one day and it was good!
SPINACH SALAD RECIPE 3 handfuls spinach, wash well and tear into bite sizes 1/2 cup garbanzo beans, cooked 4 shiitake mushrooms, chopped 1/4 cup soaked or lightly toasted seeds, pumpkin or sunflower 4 red radishes, sliced 1/2 cucumber, sliced 1/2 lemon 1 Tbsp olive oil 1 garlic clove 1/2 tsp turmeric Directions: Saute the mushrooms in warm olive oil. Add in beans, turmeric and garlic. Saute 2-3 minutes. Assemble salad: layer in spinach, radish, cucumber, seeds. Add juice of 1/2 lemon, and olive oil. Add the bean and mushroom mix on top. Toss and serve. Did you know? Spinach is a superfood. It is good for you all around. and Turmeric is a super herb. Yes, there are superherbs, just like there are superfoods! Turmeric is good for many things because it is anti- inflammatory. It helps digestion, arthritis, and has been studied for Alzheimer prevention. So I like to add turmeric in to sauteed dishes when I can! Also, shiitake mushroom is food medicine that helps to lower blood pressure, as does garlic.
Here's another salad. The walnuts give you some healthy omega 3 fats and they are good for your brain! Spinach goes well with apples or strawberries.
SPINACH APPLE SALAD 1 bunch spinach, wash well 1/2 sliced green apple 1/2 cup toasted walnuts 1 stalk celery, sliced 1 small grated carrot Mix ingredients and add in oil and vinegar or your favorite dressing.
