Summer Salads

Summer salads are nice when the weather is hot. The gardens are full of basil, tomatoes and cukes in summer and they will keep you cool.

It's simple to make your own dressing with olive oil or flax oil and your favorite vinegar. I like rice vinegar because it is mild, and I also like to add in lemon juice.

And garlic always goes in my salad since Alan requests it!

So here are some seasonal salads. Feel free to adjust the amounts according to taste!



Basic salad

I like to use Romaine because it is crispy and will not wilt at a picnic.

Romaine Lettuce about 3 cups

Fresh basil, a handful

1/2 to 1 cucumber, sliced. (you can peel if desired. If it's organic you don't need to)

1-2 fresh garden tomatoes, diced

1/2 to 1 cup sunflower sprouts

1-4 or more lightly toasted sunflower seeds

minced garlic, 1 clove

a few black olives

Toss all these together and add your favorite dressing.

Optional additions: cooked garbanzo beans, purple onion slices, crumbled feta cheese


Corn salad

Corn is ripe now. I buy organic corn to avoid the GMO corn.

2 cups or so corn kernels

1 big tomato

handful chopped arugula (optional)

handful fresh basil

1/2 to 1 bell pepper, chopped

1 scallion, sliced

1/2 to 1 avocado, cut into slices

Juice of 1/2 lemon

Pinch sea salt

Lightly steam the corn kernels. Use fresh or frozen.

Then dice and slice the vegies, toss together.

Add your favorite dressing


Mesclun salad

2 cups mesclun mix (a mix of baby lettuces, in the grocery store)

1 grated carrot

3 or 4 sliced red radishes

1-2 Tbsp purple onion

mung bean or sunflower sprouts

Toss all and Lightly dress as you desire
